All onions contain chemicals called amino acids. One of the chemicals in the onion's amino acids is sulfur. When the onion's skin is cut it brings this sulfur into contact with special proteins, called enzymes (EN-zimes). A gas then forms, which can make your eyes burn if it comes in contact with them
Onions produce the chemical irritant known as syn-propanethial-S-oxide. It stimulates the eyes' lachrymal glands so they release tears. Scientists used to blame the enzyme allinase for the instability of substances in a cut onion.
