It is not true that most Arab countries recognized the new country of Israel when it was established in 1948. Israel and many Arab counties were fighting almost immediately after Israel was established. It is true that the United Nations did recognize Israel.They saw Israel's creation as a way to end conflict. However, it failed and conflict increased instead.
