The original enzyme is more ordered than the new one because the original enzyme is present in a good and correct form whereas the new enzyme that is produced after heating has incorrect sequences due to denaturing by heating.
The original enzyme can play its function properly while on the other hand, the new enzyme can't play its role properly and efficiently so we can conclude that the original enzyme is present in more ordered form than new enzyme.
