Enzymes work in a way that is called nowadays as lock key system.
I'll give you an example to clarify how it works, wonder that you are a cow, that's crazy right? Okay, with that in mind, you can only eat grass, I don't know, you're a different cow, but within your body, you only have the enzyme that matches this kind of substrate, but how does that work? Easy, imagine a door, the lock is the enzyme, and the key is the substrate, in this case, grass, or even, cellulose, the door will only open easily with the right key right? But what if I eat something else? Well, imagine someone trying to break in the door, it's almost what's going to happen, or, you won't even digest it. Okay okay, but how does it lower the activation energy? I'll show you a graphic to make it easier to understand:
