I'd say color, the only time color is specified when talking about muscles is when there is a disease involved, like White Muscle Disease, where the muscles become calcified. Generally, all muscles in the human body are the same reddish-pinkish color, and what would be considered "dark and light" meat in terms of poultry and deli meat are defined by smooth muscle or not-smooth muscle (forgot the term, lol).
