I am confused on what form of estar to use. we are suppose to use estar with adjectives but the test is nothing like what she is teaching

you would use "estar" in a sentence like, "voy a estar con mis amigos" which means "i am going to be with my friends". i don't see how you can use it in the examples you put.
Voy a estar de vacaciones
Con mis amigos vamos a estar con muchos examenes
