Because plant cells have cell walls which are strong enough to resist increasing pressure within the cell ! As water enters central vacuole by osmosis , the vacuole then expands and swells up . The vacuole and cytoplasm press outwaards against plasma membrane which then will presses hard against the cell wall . SO it becomes turgid instead !
