The answer is - The rift will widen between the plates; new crust will form on either side of the rift, water from the ocean will rush in, and eventually Iceland will split apart.
What happens on the island of Iceland is little opposite to what happens under water. Under water, where the tectonic plates are submerging along side the submergence line there's forming of underwater/mid-ocean ridges (underwater mountain chains), while on the land we have a rift that widens constantly and splits little by little the island on half, which in very short time (geologically speaking) will allow the waters from the ocean to penetrate in between, thus splitting the island into two separate islands.
