Osazones formation test involves the reaction of a reducing sugar with excess of phenylhydrazine when kept at boiling temperature. 

The reaction involves formation of a pair of phenylhydrazone functionalities, concomitant with the oxidation of the hydroxymethyl group in alpha carbon.
