Chinese labour was initially used as a test subject. Despite 19th-century prejudices about their endurance, strength, and other qualities that some believed would prohibit them from finishing the arduous 10–12 hour stints of hard labour throughout a 6-day work week, fifty employees were first hired. They received lower pay than other employees and were required to provide their own meals. However, the Chinese labourers were able to benefit in several ways from this disadvantage. Records show they consumed a diet full of rice, tea, veggies, and seafood.
